Tortang Talong ( Eggplant Omelet) Recipe

 4 pcs. medium eggplant
 2 pcs. egg
 2 pcs. medium tomato, chopped
 1 medium onion chopped
 2 sticks onion scallion sliced
 ½ tsp ground pepper (optional)
 2 tbsp grated cheese ( optional)
 salt
 cooking oil

Opt. 1 Grill
Grill the eggplant until the color of the skin turns black.
Check it with fork if it is tender .

Opt.2 Boil
Boil the eggplant until the color of the skin turns brown.
Check it with fork if it is tender .

Peel the eggplant dont slice or cut the boiled or grilled eggplant.
Press the eggplant by using fork.
Set aside .

Beat the eggs in a bowl.

Mix the onion, cheese, scallion, pepper, and salt with eggs.

Transfer the mixed eggs with seasoning in a 1 1/2 inches deep plate.
Put the eggplant and make sure both sides are coate with egg.
Put the eggplant one by one .
Make sure 4 eggplants coated both sides.

Heat the pan with medium heat.
Add a cooking oil and should be heat .

Fry eggplant both sides one by one.
Wait until it gets light brown,

Serve hot with ketchup.
