 2 cups salt
 1 kg fish
  cup sugar
 ¼ tsp MSG
 3 pcs. bay leaf
 black pepper

Clean and eviscerate , wash fish thoroughly to remove blood, dirt and stain.
Drain for few minutes .

Prepare brine solution by mixing 1 cup salt with 6 cups water.
Strain brine solution with cheese cloth.

Soak fish in brine solution for 30 minutes.
Drain fish.
Prepare another brine solution by mixing 1 cup salt and 9 cups water.
Strain.

Boil brine solution and when it boil drop the fish simmer for a few minutes until eyes are
translucent and dull.

Remove from water and drain thoroughly until dry. Dry fish for 30-45 mins. Smoke fish for 30-45 minutes.
Cool thoroughly and packs.
