Simple Sweet Corn Soup Recipe

 1 tsp olive oil
 1 onion chopped
 450 g potatoes, sliced
 350 g can sweetcorn
 3 ¾ cups vegetable stock
 Salt and freshly black pepper

Heat the oil and fry the onion for 3 minutes. Add the remaining ingredients. Bring to the boil, then simmer for 30 minutes.


Blend, mash or leave lumpy. Reheat if necessary and serve hot.
