Peanut and pumpkin soup Recipe

 150 ml dry Madeira
 1 vegetable stock cube
 1 tbsp tomato paste puree
 2 ½ cups water
 1 cup toasted peanut
 225 g pumpkin cubed
 1 celery stick, diced
 1 small green chilli, seeded and chopped
 1 carrot ,diced
 1 onion, chopped
 3 tbsp peanut ( groundnut) oil
 grated nutmeg
 salt and freshly ground black pepper

Heat the oil in a saucepan and stir fry all the vegetables and the peanuts for 4 minutes.

Add the water, tomato paste and stock cube.

Boil for 8 minutes.

Puree in a blender. Add the madeira . Reheat

Season to taste.

Ladle into warm soup bowls and sprinkle with great nutmeg.
