Pork Humba Recipe

 1 kg. Pork belly
 1 onion, diced
 8 cloves garlic minced
 1/4 cup soy sauce
 1 tsp. Whole peppercorn
 2 pcs. Dried Bay leaves
 1 cup pineapple juice
 1/2 cup vinegar
 3 tbsp. Salted black beans
 2-3 star anis
 1/2 dried banana blossoms
 3/4 cup brown sugar
 4-5 cups meat Broth or water
 1 pork cube optional

Cut the meat into desired sizes without removing the fat.
Marinate the meat for about an hour and garlic, onion, vinegar, soy sauce and peppercorn.

Separate the meat from the marinade.

Place the pork belly in a large pan and cook until it browns on both sides.
The oil that the meat will render will add flavor to the dish.

In the same pan, pour the marinade, meath broth or water, bay leaves, star a is and pineapple juice.

Bring to a boil. Add black beans and brown sugar. Let it simmer for about 20 minutes or until the pork is tender.
If you want it more saucy, you can add more liquid.

Add the banana blossoms and let it simmer for 5 minutes or until the sauce thickens. If you prefer, you can add hard boiled eggs chicken egg or quail egg.

Serve in a large bowl. Best serve with hot rice.
