Cucumber and Walnut Salad Recipe

 1 large cucumber halved, and sliced
 8 radishes,sliced
 1 large green bell pepper,sliced
 1 spirng onion (scallion),chopped
 50 g walnut pieces, roughly chopped
 Thyme sprig chopped
 chopped parsley
 30 ml soy sauce
 7.50 ml olive oil
 7.50 ml lemon juice
 1.50 ml ground ginger
 10 ml clear honey

Place all the salad ingridients and thyme in a salad bowl. Mix all the remaining ingredients in a jug.

At the table, toss the salad in about half the dressing. ( This dressing keeps for weeks.

Make extra, chill it, and use it later to make a sliced raw mushroom salad for marinating tofu.
