Wash the glutinous rice three times.
Add the coconut milk and pandan leaves.
Add lesser amount of coconut milk so the rice will not be fully cooked.
Cook the rice in a low heat.
In a medium heat , boil 2 cups of coconut cream.
Set aside the remaining 1 cup for the LATIK.
Add the brown sugar and stir constantly.
Let it boil.
When the mixture is thicken .
Add the cooked rice. Lower the heat.
Stir constantly until the rice became sticky.
Biko is ready when its hard to stir and pull from the pan
Bring to a boil the remaining 1 cup of coconut cream in a medium heat.
Stir constantly until starts to thicken .
Lower the heat and stir constantly until the cream separates into the coconut oil.
Turn off the heat as it became golden brown. drain the coconut oil .
Transfer BIKO in a baking dish. You can put banana leaves also in baking dish.
Flatten the surface and top with Latik.
You can also add crashed peanuts on top.
